    How hard is it to make this? Iโ€™ve made some challenging things like a French mustard chicken in a Dutch oven. Just want to get an opinion.

    I would slice a big inch thick piece and then, I’m sorry to say, pan-fry it until it wasn’t this raw. Couldn’t need more than two more either side but this is undercooked.

    This looks like it had potential to be really good. Time and temperature are keyโ€ฆ this was pulled a bit too early. Pastry and meat both underdone

    Its obviously been advised but I cannot stress how critical a meat thermometer is for food safety. I add this comment for any readers passing by. Its very worth while for amateur cooks or more complex meals using an oven or large pieces of meat. That and it can be a boon as you can monitor temperatures to safely achieve rare or medium rare since it’s also easy to over cook. Totally worth it. For both safety and flavor.

    My local butcher used to make little parcels of beef Wellington; like individual eye fillet steak-sized ones. I miss them. I was about 16 and they were a mere $5 (AUD) a pop! I ended up learning to make them for myself, but have never made a proper sized one. Might be my new years resolushe

    The beef looks perfect. The dough looks too thick and raw as a result. Just needs to cook longer. The outside of the dough still looks under baked as well.

    Beautiful. My buddy spent nearly 3 decades in a kitchen making these OG chonky Hot Pockets ad-nauseam. He would rather staple his eyelids to his toes than make another. Congratulations on such an attractive gift!
